Cream Cheese Olive Celery Sticks Top Holiday Low Carb Appetizers

In our family, holiday dinners are not centered around the turkey or ham, nope. It's centered around the Cream Cheese and Olive Celery Sticks. The family member that gets appointed the role of the "celery stick" maker is the most anticipated guest for when discussing "who's here and who's late?" Because the turkey stuffer is playing second fiddle to these bad boys.

Also, we don't call them by their long name, we just refer to them as celery sticks, so if a family member says, "don't forget the celery sticks," you bet your booty you better not show up with celery sticks and some lame ranch dip--those sexy green sticks better be fully loaded with cream cheese, olives and a lightly sprinkling of paprika to top it off.



The picture I've enclosed used 2 stalks of celery. One large jar of olives with the pimientos. 4 packages of Philadelphia cream cheese--don't even bother using the cream cheese that you can find in a tub or a generic version. Must be in a block shape and Philadelphia for you to get the full experience.

  • Cream Cheese (100 Calories per serving, Net Carbs 2)

  • Green Olives with Pimiento (25 Calories per serving, Net Carbs <1)

  • Celery (3 Calories per 1 stalk, Net Carbs 0.2)

  • Paprika (6 calories per Tsp serving, Net Carbs 0.4)

Instructions


  • The whole process is simple. Cut the hard ends off the celery stalk and rinse under cold water.

  • Cut celery into 3" inch "logs" or however length you want, but ensuring they're even.

  • Dice up the Olives into slices then re-slice the sliced up pieces one more time without mincing them.

  • In a large mixing bowl (or any large bowl) add two blocks of cream cheese then half the plate of diced olives. Mix well.

  • Add the remaining 2 blocks of cream cheese and other half of diced olives. Mix well.

  • Grab a fork and start scooping a nice size portion onto each celery "log" and place on a serving dish.

  • Once finished, sprinkle paprika lightly all over. Seal with aluminum foil or serving dish cover and set in the refrigerator to chill for a few hours

Just remember the serving size you consume is based on how much you use on each "log" and I can't predict what you may use. The serving size is small when everyone around you is munching on holiday treats. Be cautious about how many you are eating. 🙂 I certainly can't stop at just one. 😉
