Deviled Eggs: Low Carb and Eggcellent

It's Easter morning and you're stuck watching everyone enjoy their baskets full of candy and you're left wondering what you can have to feel festive. Then you realize that their is an entire carton of colored eggs you and the kids decorated the night before. You were planning on using them for egg salad sandwiches for the hubs but to hell with him while watching him gorge on cadbury eggs and not gain weight you need to eat, too! make some deviled eggs out of that batch because they are absolutely ZERO CARB!




Deviled eggs are one of the easiest appetizers to make. Boil the eggs. Mix mayonnaise, mustard and the yolk. Scoop filling into the eggs and sprinkle some paprika bada bing bada boom!

And, and this is a big AND you already had the eggs boiled from the night before so it's even more simpler.

Okay, okay there is one tedious part but you might be able to get the kids to help out--peeling of the shells. Just rinse of the shell shards and as much color dye as you can and slice them in half, YOU slice the egg, not the kids.



  • Dozen eggs
  • 4 tablespoons yellow mustard
  • 6 tablespoons mayonnaise
  • Paprika
  • Easter Spirit 😉

I know that this is a very short post compared to my very long ones I write up and the reason for this is because it is such an easy snack to make and nearly everyone knows how to make 'em but I wanted to post it for all the low carb beginners that are still trying to figure out what they can and cannot have on the low carb diet.



When the water has reached boiling temperature start the egg timer for 12 minutes


Let the eggs cool or run under cold water

STEP # 4

Peel the eggs

STEP # 5

Once your boiled eggs are fully peeled, cut each egg into half. Take a small spoon and scoop out the hardened yolk and place into a bowl. After all the yolks are scooped into the bowl proceed to the next step.

STEP # 6

In a medium bowl, combine the egg yolks with 6 tablespoons of mayonnaise. Add 4 tablespoons of yellow mustard and mix until smooth and creamy.

STEP # 7

Sprinkle paprika
