Easy Carbquick Pizza Crust Recipe for Ketogenic Diet

It's ketogenic pizza time as I've had two boxes of carbquick sitting in my pantry for months because I was afraid to use it due to some claims of "slow carbs" or raising blood sugar, but I went for it. My first attempt at making this low carb pizza crust failed because of the weakling operator didn't add enough muscle into her kneading, so her show off husband decided to step into the ring as you'll see in the pictures below in case you thought I grew hair on my knuckles overnight. 🙂

The final result is a tasty pizza with just 2.25 carbs per serving - You could eat half of the 12" pizza for just 9 carbs including toppings if you're really hungry. My husband said the crust tasted a bit dry, and If I had to compare to something I would say it taste just like homemade pie crust, so this recipe would be terrific for a chicken pot pie, etc. You can add some sour cream to omit the dry taste but I liked it that way and tuck it into your ketogenic diet recipes arsenal for safe keeping.

 
The step-by-step process will by illustrated below and you'll discover that the recipe is easy peasy lemon squeezy. Before we begin the prep preheat your oven to 425° & Grease 12" Pizza pan

Carbquick Crust Preparation

Ingredients

  • 1-1/2 Cups Carbquick
  • 1/3 cup hot water (must be 120° - 140°)
  • 5 Slices of provolone cheese (I used Publix stored brand Provolone zero carbs)
  • 5 Slices of pepperoni (Publix brand zero carbs)
  • 1/4 cup Giorgio's Mushrooms (1 carb)
  • 1/3 cup Rao's Pizza Sauce (1 carb)
  • 4 Spinach Leaves
  • Basil/Oregano

Step 1

Add 1-1/2 cups of Carbquick into a mixing bowl. I bought mine on Amazon and got the 2-pack deal.

Step 2

Heat up 1/3 cups of water using a thermometer get the water to 120° - 140° ( I did the lazy microwave heat up process)

Step 3

Add the hot 1/3 cup of water to the mixing bowl containing the 1-1/2 cups of carbquick and turn on the mixer. If you don't have a mixer you can mix by hand it will just take a bit longer.

You will notice that the dough has a crumbly texture, this is completely fine, and yo didn't do anything wrong. When you squish the ball together to begin the kneading step it will mold together nicely. 🙂

Step 3

Begin kneading the dough into a nice ball pinching the crumbly parts together until it looks like the picture below.

Step 4

Here's where you'll be introduced to my husband's sexy hairy knuckles. He's a pie roller and rolling the dough onto parchment paper. The image on the bottom right shows my husband pinching the edges because this dough is more crumbly than traditional flour so if you're a perfectionist like he is then you can pinch the edges to get that ideal pizza crust smooth surface.

Step 5

Here's the fun part - adding the toppings!

I use RAO's pizza sauce found at my local grocery store and it ONLY has 1 carb per serving and the serving size is huge. If your store doesn't carry it try Amazon but do try and find it at a local store first to save money as the price on Amazon is nearly double the price I pay at Publix. It's the best ketogenic diet friendly pizza sauce I've tried.

 

Step 6

You can use mozzarella cheese for this recipe but the mozzarella I find have at least 1 carb per serving, so I use provolone and I like the taste of provolone on my pizza, as well, as it reminds me of Papa Gino's pizza from Boston. Before I add the cheese I sprinkle basil and oregano.

Next add the 5 slices of cheese. We used the fifth slice to fill in the empty spaces - You can't have empty spots without cheese. Ha!

Step 7

Add the tops of your choice. I used Giorgio's precooked mushrooms, five slices of deli style pepperoni, and four pieces of fresh spinach with a final sprinkling of basil and oregano.

Step 8

Once you're finished with your pizza carefully transport it to the greased pan by sliding it off slowly from the parchement paper. I would've placed the crust onto the pan before adding the toppings but my husband is a show off, so you decide which option is easiet. LOL.

Now place it into the oven on the lowest rack and set your oven timer for 15-minutes. Once it reaches 15-minutes keep eyeballing the crust to make sure it's got the golden brown color. Once the crust has a golden brown color place it on the top rack to get your cheese to brown more (optional).

Here is the final product. 2 carbs per serving for the pizza crust plus what you add for toppings. One serving of my pizza including toppings is 2.25 carbs. If you want to eat the WHOLE PIZZA it will be 18 carbs. Half the pizza would be 9 carbs...you get the idea. I'm basically saying you can have a fun Saturday night on this pizza if you want to stuff yourself silly. 🙂

  • 80 cals per slice (I used 5 servings)
  • 6g total fat
  • 4g saturated fat
  • 200mg sodium
  • 0g carbohydrate
  • 0g fiber
  • 0g sugar
  • 6g protein

Deli-sliced Pepperoni

  • 130 cals per serving (I used under 1/2 serving)
  • 11g total fat
  • 4g saturated fat
  • 520 mg sodium
  • 0g carbohydrate
  • 0g fiber
  • 0g sugar
  • 6g protein

Giorgio's Precooked Mushrooms

  • 20 cals per 1/2 cups serving with liquid (I used 1/4 cup drained)
  • 0g total fat
  • 0g saturated fat
  • 390mg sodium
  • 3g carbohydrate 1g fiber = 1 net carb
  • 1g sugar
  • 2g protein

Nutritional Total Per Slice

2.25 total carbs fiber was already deducted 🙂
